Apricots with Blue Cheese

Apricots with Blue CheeseChoose whatever blue cheese you prefer but make sure it is slightly creamy. The broiling softens the cheese and brings the two flavours together.




18 small fresh apricots
1/4 cup (50 mL) olive oil
1 tbsp (15 mL) freshly squeezed lime juice
Salt and freshly ground pepper
About 1/4 lb (125 g) blue cheese

1. Cut apricots in half and remove pits. Place in large bowl. Mix oil and lime juice together. Season. Pour over apricots and toss gently.

2. Place apricot halves, cut-side-up, on cookie sheets. Cut blue cheese into small pieces and place in the centre of each apricot.

3. No more than one hour before serving place under preheated broil for one to two minutes or just until cheese softens.
